Born in 1950, bladesmith Hideo Kitaoka practices his craft in Takefu Village, Echizen City, Fukui Prefecture. He began learning the art of knifemaking at a young age under the guidance of his father and now specializes in crafting traditional single bevel knives. Staying true to tradition, Kitaoka forges his blades using high carbon steel to achieve the highest edge quality. His exceptional craftsmanship is evident with every use, making these knives a prized tool—even among sushi chefs around the world.
